FTF: pork binagoongan

who would’ve wanted to come out these days? blustery and howling winds? somehow, it gets into my head. and, into my throat, too. were it not for the kids who would need the energy for their quarter exams i would just be content with a cup of coffee.

since i got lazy going to the market, i had to do some creativity in the kitchen. i just have to make do with whatsoever is  in the fridge. found me some left-over lechon (roasted pig), it has been over a month in the freezer!

my version of pork binagoongan; sauteed the meat with garlic, onion and alamang (anchovies, er, shrimp paste)

instead of the usual boiled eggplant which i'm not fond of eating, i fried the eggplants and some bananas, i bet ya, it all goes well with my lechon pork binagoongan.

made these desserts from the humongous jackfruit we picked out HERE…

these yellow fleshy bulbs of the jackfruit can be eaten fresh or sweetened

or, instead of ripe mangoes which are not in season here now, we opted to have sweetened jackfruit for our "suman"...there's nothing like it, i bet ya!!!

and, in the afternoon, we had this icy and milky dessert with sweetened banana, a la "saging con yelo" with a twist

FTF: rolled deli sandwich

finding other use of the loaf bread other than sandwiches. i pressed each bread with an empty bottle since i do not have a rolling pin ^_^
pressed each one til it became this super thin
finding some use of the edam cheese which my bro gave me
roll each bread
dipped in a pool of scrambled eggs with a dash of cinnamon
then coat with bread crumbs
deep-fry for a minute or two or until golden brown

enjoyed mine with a hotcake syrup

FTF: sushi

konnichi wa. we’re turning japanese today as i finally made my first attempt at making futomaki, a type of sushi rolled into dried seaweeds or nori. i was to try westernized sushi also, the california rolls, but too bad, i failed to find any tobiko or fish roe.

bought dried nori and the crabsticks @SM. i was looking for avocado at our local market, i found none...

my sushi rice was "palpak", became too sticky...maybe i could cook it better next time...

cut the sushi onto desired size after rolling them out on a bamboo mat...

nori can be too sticky & difficult to hold when your hands are too wet

my very own futomaki w/ kikkoman as dip…served on our noche buena.

til the next sushi...sayonara ^_^

GT: health resolutions

thanks for this wonderful meme, very apt indeed, for after the so many “FOODSCAPADES” we have last holidays, i think i might not need to eat for this whole month to brush off the calories and the cholesterol i devoured into my tummy!

i am not a healthy person, as i always said, i am frail and sickly as a child, being a picky eater and a dad whose a carnivore, lol! my sibs only knew of pork/chicken as viands and we shun most of the vegetables my mom cooked. maybe, that’s when i acquired my iron deficiency which til now haunts me. i had my blood pressure checked before christmas, and was i glad i had 100/80, instead of the usual 90/70. for long, i’ve been dependent on iron supplements which i abhor because i always had stomach acidity and my constipation has gotten worst.

this year, i’m targeting a steady bp of at least 110/80. i am not on a special diet, i am free to eat everything’s on the table, thank goodness, i may be blessed with a good metabolism, though my BMI suggest i should be 48kls, i am maintaining my weight at 53-55kls, max! god and goddesses of food, HELP ME!!!

for most people, it is really hard not to feast on foods, esp. hubby who finds it very hard NOT TO EAT! last year, his sugar went overboard because his cholesterol reached a maximum high…he prefers not to take meds, will try to lose weight through exercise, he tells his doctor…sadly, he aint do any exercise at all and he eats like there’s no tomorrow! what shall i do? most of the times, we argued on the topic. i always tell him...”if you wanna see your kids grow… might as well make a double 360-turn on your eating habits.”

guess, i may be the cause of his voraciousness? what with the food served on our table???

i loathe meds, i just took my iberet before and after my monthly periods, and paracetamol only when my stubborn migraine hits me bad!

hope every one shall have a blessed and healthful new year. there’s nothing like a jolly person without a healthy body and a sound and peaceful mind.

Ruby Tuesday: 18th birthday

sharing here @Mary’s  Ruby Tuesday of Work of the Poet, our daughter’s ruby-filled celebration of her womanhood…

in 1992, she was a cry-baby, first time mom like me could only cry when i wouldn't know what to do ...

now, she's an eighteener, a full-blown princess of her dad...

2-layer luscious and moist chocolate cake w/ slabs of strawberry/chocolate on its wall, a gift from her godmother and my FRIEND LUNA

she would want not to have a celebration, she would rather have a vacation, but then, since her birtrhday falls on a holiday, everybody seems free and have fun on her day!

so, we let visitors (her friends and our kins) feast on this cholesterol-laden roasted pig...chow, chow, chow!

and, for a party not meant to be...it became a super celebration for her...what with the cash gifts she has received, the presents she got...all's worth it! i just wished this "pretty lady" more success in her online business, and, MOREOVER, THAT SHE BE ABLE TO GRADUATE IN COLLEGE NEXT SUMMER. her dad would feel like winning the lotto, he said ^_^
