crushed grahams pie

Quick dessert for kids who likes to yank up our fridge every so often, and when they do found out there’s none, they will throw the fridge’s door so loud i think it could fall off the floor!. KIDS!

Hence, besides buying them cookies I also think of recipes that were just so easy to prepare and one that would easily appeal to them. My kids do really have sweet tooth…like as I DO ^_^

Here’s a quick one…

Melt butter in a pan and mixed with Crushed Graham Crackers.

Pressed unto desired pie plate or what-have-you’s… Refrigerate while you’re making the filling…

For the easy-cheesy filling, I did melt a small package of chocolate bar into a pan then slowly whisked in the Alaska condensed milk. Stir until it becomes a little thicker. Whisked in a package of Philadelphia cream cheese.

Put in the filling to the grahams pie. let it cool or refrigerate until the filling sets…you can now choose from wide varieties of fruit toppings…my kids does not like the mangoes i bought because it’s a bit sour..

first pie, i prefer these dried plums as toppings, hmmm, bet yah, IT’S GReeeeAT!

lick em up, Nutella!

I wasn’t surprised a bit when I saw this morning this empty jar of Nutella. The little one never bothers to get a sliced of bread, she will just spoons it of the jar and licked em! She thought she was eating chocolate spread, especially when I told her it was made by the same man who made her favorite Ferrero chocolates. She wanted more! Where, in fact, it only contains little cocoa but more of hazelnuts, ergo, the name.

My kids so loved the creaminess of it that when I would asked them what do I need to buy for their sandwich spread, they would all echoed to buy Nutella. I guess , every kids need variety in the foods they eat. I used to buy different spreads, but the photo obviously says it all!

Cereals are a favorite, too. They love their Kellogg’s, okay, especially my little one. But, the older 2 needs something heavy. One might be asking for fried rice and an egg and the eldest would come to the breakfast table looking for a sandwich. A mom has to give in. There is no greater joy than seeing your family enjoying every meal you prepared. And, the joy of seeing them, well up on their feet for the day’s activity? Beyond marvelous!

Has summer time really arrived? Yesterday was hot. But just this morning, the wind strikes again. Changing weather affects kids here. My youngest had  been coughing for 3 days. Last night, she was fretful, asking me to massage her back with Vick’s Vaporub. Even my 5 months old niece had a bad case of the common cold. When I visited her this morning, she kept on crying. So pitiful.

Changing climate affects many people. Best thing to do is keep our immunity optimized by eating the right kind of foods high in nutrients.

Summer means  lots of fruits, succulent fruits…I was buying bananas and ripe mangoes yesterday, too bad, the mangoes aren’t appealing enough. It looks “maasim” (sour).  The chicos (my favorite, and hubs, too) we’re too ripe already. Alas, I spotted these local turnips (singkamas)...Jicamas, as other temperate countries call these root vegetable.

I love its crisp and pear-like texture. Although it contains traces of Vitamin C, its starchy flavor has enough dietary fiber for our carbohydrate needs.

I like mixing it whenever i cooked siomai and lumpiyang sariwa.  But, I might try this side dish recipe I googled when time permits. For now, I like it eaten raw and icy chilled. It’s water composition is enough to keep you hydrated these coming hot months.

knowing your BMI

hubby has been “seriously” battling with his diet since 2009. i’ve set him up an ideal weight for him. i usually monitored his BMI. BMI or Body Mass Index does not actually measure the body’s fat percentage but it is a guideline so formulated for us to know whether we are going overboard with our weight as it is measured by the proportion of your weight versus your height.

hubby’s BMI is 27. given that his height in meters is 1.7. and his weight in kilograms is 79. to get the bmi, simply divide the weight to the square of the height:

79 / (1.7)2 = 27.

according to his doctor, hubby is overweight. if he goes higher that 30 BMI, he’ll be obese. he is a little worried. I AM NOT. from then on, i try to limit his carbo intake. i boiled bananas and potatoes for his carbo substitutes. it’s a little burden. but, he’s too stubborn that if i wont make the move he’ll never go easy on his diet.  i also coerced him to do jogging everyday. diet and exercise is hard on him. too much punishment, he would often say. i told him that jogging burned more calories than brisk walking.

some people really finds it hard to change their lifestyle. a risk factor for developing certain types of diseases. i wished hubby would “totally” trade off his cigars for a better health.

mismatched cake

SCENARIO: 18th December 2010, daughter and me had a tete-a-tete that morning regarding our itinerary that day. we have to go grocery shopping together. i gave her list what she needs to buy, we agreed to have an afternoon rendezvous at the mall’s fastfood area. i was shocked when she bought a rather familiar rectangular box with a red bow…

twas a fruit cake. i was fuming mad! not that i didn’t want it. in fact, it’s in my list next to Purefood’s Fiesta Ham. what am i so irate about is...IT IS NOT INCLUDED IN HER LIST! she said, it it HER GIFT for me. she knew i wanted fruit cake for Christmas. but NO, i didn’t buy her thoughtfulness. BECAUSE, I ALREADY BOUGHT ONE OF THE SAME FRUIT CAKE!

oh boy, need i tell everyone that we almost pulled each other hairs for the argument that followed? LOL!

AND SO, we had bought two fruit cakes for Christmas. we opened the first one at Noche Buena, but the kids never liked it. so were my nephews and nieces…nobody wanted to eat it. I WAS GLAD! LOL again! hubby, me and my brother were the only few who likes the taste. hey, it’s my favorite!

then, the other one which we stored in the freezer (fruit cakes are best eaten when frozen), we opened it last Valentine’s Day.

veggies and fish burger

Before heading out for a Sunday rendezvous with some parents at my daughter’s school, I hastily prepared these meals for my family to enjoy. I missed these combination of veggies sauteed in onion, garlic, and a little shrimp paste…And, for the kids not to fret for not having any “meat”, i fried fish burgers…i boiled the fish with lemon grass (tanglad), then debone them…added diced carrots, celery, ginger and onions…then, add two eggs and flour and salt and pepper to taste.

Talking about what healthy foods to cook for the kids…

My mantra when enticing my kids to eat more veggies and fish…

“THE MORE THE FOOD TASTE NOT BETTER ON YOUR TASTE BUDS, THE BETTER IT GETS TO MAKE YOU GROW TALLER AND SMARTER!”

and this one, too…

“THE MORE THE FOOD GETS BETTER ON YOUR TASTE BUDS, THE MORE IT WILL MAKE YOU FATTER AND UGLIER”

pork ribs kaldereta

i know many would agree with me. that, most mothers were either busy at their house works or their daytime jobs, while there were some crisscrossing between the two ^_^. yet, even when moms were too busy at everything, we have to HAVE TIME preparing foods on the table. unless, we’re willing to stashed away portion of our budget to pay for an out of the house dining? frugal mom like me would rather endure pain-in-the-neck cooking my butt off in the kitchen than spending on something i can cook for my family. minus of course those heavily “garnished” eye-popping menus!

my “gang” recently wanted saucy and spicy. and said, they were missing “kaldereta”…here one goes…

stew the pork ribs together with the coconut cream (gata), some fresh tomatoes, garlic, onion, spices...

of course, my kids favorite, RENO (liver spread). i tell you, the combination of the coconut, and the liver spread and the tomatoes will make my kids licked even the bottom of the pot!

not another taco

usually, i had coffee at night or candies when i had posts to finish. but, just two nights ago, i did get hungry and when i opened up the fridge, none appeal to me, except the tacos. too bad, no ready filling was there, not even any greens to go with it. only these were available and seems easy to prepare…

a cheddar cheese, mayo w/ cheese and catsup for color, and the tacos which i broke up into chip-like pieces

and, so, there it was, tacos became nachos n cheese w/ mayo dip...AND, MY CAFE AU LAIT!

plate o’salad

i had this salad plate at KFC when i was waiting for hubby who renewed his driving license at an LTO branch in the mall. since i am alone, i took my seat outside the restoreserved for other food kiosks. and, i “hastily” took a snapshot of the food i ordered. it was not my first time dining at a KFC, nor was it my first time ordering their “caesar’s salad”. take a look at the photo:

MARGAUX SALCEDO said in her write-up, “PLEASE DON’T GIVE BLOGGING A BAD NAME”…(wink)…don’t ya worry, i am not related to any PR firm, but i had to say an honest opinion regarding their salad, can I?

first, where’s the cheese? i guess, they run out of Parmesan cheese so they opted for the cheddar usually reserved for spaghettis. and they, too, get rather stingy on the dressing which was served on the smallest of plastic cup! can’t seem to coat all the rather limpy leaves of the romain lettuces! my bad, sorry!

er, i did pay my own meal, i had a little “burp” after finishing the meal. thanks for that. and, good thing, no one gave me that creepy look when i took the snapshot. SLR’s becoming too common these days and with the dawning of bloggers writing every stuffs under the sun, some establishments sometimes throw a leer every time they saw one carrying a cam. mine was an outdated pocket digicam (hu hu)!  A friend told me that when he went to Greenbelt with a dslr dangling on his shoulder,  a security guard approached him “nicely” telling him not to take pictures! is that true?

so much for my brouhaha, it’s a beautiful Monday!
