buco pandan

26 Jun

While sweeping dried leaves in the front yard early this morning, I noticed that there were too many golden coconuts ready for picking. Instantly, I got the cravings for fresh coconut milk and water. Yay!

I asked my nephew and niece to go get us some. Then, they must’ve enjoyed picking that they have got ten coconut fruits in all. What else must I do?

Good thing, the pantry had never run out of cremes, condensed milk…always stacking up on those. You’ll never know when kids would do fruit shakes, or any desserts that needed milk and milk products. I always opt for the products in tetra packs -cremes, evaporated milk, condensed milk- they’re cheaper than those in cans. Just make sure to check the expiration dates on the label. Other grocery shops tend to give off products with near expiration dates as freebies. Moreover, products in tetra packs can be safely stored directly to the fridge not unlike those in cans.

So, on seeing the “surplus” coconut meats in the kitchen cupboard, I decided to make a dessert so easy to make and a very popular dessert here especially on occasions/events. It takes only few minutes of preparation and not so many ingredients.

We have here:

1 small pack of powdered gelatin (cooked as per packaged direction)

half cup raisins

1 pack condensed milk 9used up 3/4 only)

1 pack cream

1 cup grated cheese (or cubed, perhaps)

Procedure:

When the gelatin is set, cut into small squares/rectangles (whichever^_^). Mix all the ingredients. Chill (not freeze).

Dessert is ready.

Kids will be surprised when they get home from school. They are always hungry when they do arrived. Always looking for anything to eat.

crazy over milk teas

25 Jun

This young lady is crazy over milk teas. She’ll take me around the city looking for kiosks or shops selling milk teas. There’s the Simplicitea in Robinson’s Pacific Mall, where she did try out couple of flavors, and at Granitaholics beside MegaCenter Cabanatuan where it also serves couple of milk/bubble tea flavors.

When we got to Robinsons Place Manila she had tried this cup of Gong Cha Milk Winter Melon Tea  for Php115.

I am not a fan of milk teas. I still have to plunge into the idea of infusing creams, latte, and other flavors to make a concoction such as milk teas. I do simply enjoy my iced tea in sweltering afternoon summers or a green tea over lazy rainy afternoons.

The current hype over milk teas has taken the whole metro by storm. Another sweet indulgences one may want to try.

TEA + SWEETS? Should it equate to more CALORIES?

Oh! Omelette

5 Jun

Suddenly, the lad (a 14 year-old “voracious” eater) had been skipping his rice servings. I had been “nagging” him frequently about his weight and of his age. That, he’s already a “man”. The age where interest in opposites sex were common. Must be the reason why he’s being active on basketball all the more these days. Hmmm…My boy is growing…

For today, the first day of his school  -in junior high at the science high school near us- he snubbed the fried rice, his favorite along with two fried eggs^_^. Boy, did he snubbed a slice of loaf bread, too.

Here’s his breakfast meal this Monday morning…

1 cup hot milk

2 ham slices

2 slices of omelet veggie

For the omelet recipe. I have

3 large eggs

3-4 pieces red tomatoes

1 large onion

celery

Procedure: Dice the veggies. Stir fry into the pan with little oil. Add salt and pepper to taste plus cayenne powder for that extra flavor and “fire”. Pour in the scrambles eggs and wait to set.

Tips of the day: Turn an ordinary recipe by incorporating colorful and nutrient-rich vegetables.

The lad requests for the same serving tomorrow morning :)
