cheesecake a la riz

First, Happy New Year foodies! Wishing every one a year of happy and healthy eating. Remember that healthy eating does not mean depriving ourselves of foodies, foodies that were so gastronomically abundant during the last holidays. Weeee! It’s been a lot of yummylicious foodie season that tested how much my digestive system can tolerate. The key to a healthy eating is “EAT IN MODERATION”.

Kicking off the year 2012, I would want to share this cheesecake I painstakingly and virtuously bake for New Year’s eve family dinner. Glad, hubby was there to helped out. He prepared the grahams crust using this Black & Decker mixer he bought for me as part of his Christmas present :) . We were both laughing out as we were preparing this dessert as the kids will surely rant out loud if it ended up not edible enough. We initially planned of buying a roll cake as we usually do on New Year’s eve, but, then, I wanted to take a risk on the cheesecake :) Even though, we weren’t able to find blueberries in can at the supermarket and we were lost at finding fresh strawberries after scouring too many a shop in the city :( I didn’t let that ruin my mood.

What I did was to find whatever’s in the pantry…

for the pie crust:

1 package of grahams crushed

3/4 butter

1 teaspoon cinnamon

for the filling:

1 package cream cheese

1 pint sour cream

3 eggs

vanilla extract

Preparation:

1. For the crust, mix in the cinnamon to the crushed grahams then the butter and mix until resembles coarse meal.

2. Pressed the mixture into a cake pan or pie mold. Refrigerate.

3. For the filling, empty package of cream cheese into the mixer and slowly beat for 1 minute.

4. Add in eggs one at a time.

5. Mix in the sour cream. Mix until fully blended.

6. For added flavor, add in vanilla extract. I forgot to buy vanilla, as an alternate I used orange zest :) The aroma and the tangy taste is…be my guest to add in the apt adjective.

7. Place the creamy mixture into a cake pan and placed in another pan with water.

8. Bake 375 degrees for 40 minutes or until toothpick comes clean. Cake should jiggle.

9. Transfer the cream filling into the crust.

10. Topped with your favorite fruits.

Here’s my dessert on New Year’s eve. Thanks to hubs for helping out. Though, I wouldn’t want to share this one out to him. I’m kinda “madamot” when it comes to sweet treat :)

halo halo

I did my weekly marketing last Friday and I included in my lists just few ingredients to make halo-halo. I did bought bananas (saba), sweet potato, sago, gulaman, rice crispies (which were readily available in the market). I forgot to buy white kidney beans and red mongo beans, anyways, the kids didn’t like them.

Here they are, after sweetening up the bananas, sweet potato, sago and gulaman (i used a pack of Mr. Gulaman which costs only ten pesos)…Since, we had an emergency last Friday, my mother-in-law was admitted to the hospital, it is only yesterday that i got to take photos when the sago and the gulaman were nearly empty!

This is the ice shaver. Cool pink color, e^_^. Our ice shaver broke two years back, couldn’t find a decent one (note: cheaper one) in the market. So, I settle for this olden way to have ice shavings. Anyway, the kids were courteous enough to helped in the preparation…

There’s my niece enjoying her halo-halo at yesterday’s swimming in our front lawn via rubberized Intex pool. You may wanna peek at their swimming fun HERE.

AND, there’s my blue halo-halo cup, courtesy of Alaska Evaporated milk, which were given free few years back.

This meat mincer from Moulinex is a wedding gift given by my sister-in-law. I got married in 1992, so this small helper was in my kitchen THAT LOOOONG. It has been my company for making not-so-gourmet-recipes, but surely, this handy appliance helped me a lot, budget wise, and it’s very easy to use and to store.

I often used this whenever I needed ground meat for dishes like lumpiyang shanghai, siomai, spaghetti, and even chicken spread. It can also be used for grinding veggies I needed for my lumpiya. So versatile.

From the time I got this, I no longer buy ground meat at the supermarket. Anyways, I still prefer buying fresh poultry and meat at our local market.

this Moulinex item used to be white, now, it's more of creamy white because of frequent usage ^_^

there's the pork. cut into smaller pieces and most importantly...the blade could not tolerate grinding the skin...

there it goes...nicely done...

there's attachment where you can do longganisa or small sausages, too. nice e ^_^

after mincing, parts can be separated...

...for easy cleaning, and...

the bottom panel has a small storage for the cord...no wires, no mess!

I just so loved this kitchen helper. It has weathered all the hardship I was supposed to bear. Since hubs and I got married, we’re into this small backyard piggery which until now supports our family’s income. And this is one tool that necessitates what we have started.
