how to poach an egg

Hubby’s kind of “fast” breakfast especially when he needs to go out very early.  Bread toasts, 1 piece triangular cheese and a poached egg.

To poach an egg:

simmer (no need to boil)  two cups of water

add 1 tsp. vinegar, stir

while the water is running a slow swirl, slowly drop the egg to the center of the pan

stir the outer side of the water so as to keep the egg at the center and not spread out.

 It took me a while before achieving a perfect poach egg. For the love of the hubby, who needs to get rid of oil from his diet, this is a better alternative to his sunny side up.

make your own pancakes

Were you also the one who would wake up in the morning trying to think up what to cook for breakfast? Then, while frying some eggs, will try thinking again what to cook for lunch and dinner and onto the next day. Motherly thoughts were filled with nothing else but what food to serve to the family. Routine thoughts. Which adds up to my migraine :)

Because Monday became a holiday, twas came a rice holiday, too. No fried rice and hotdogs on the table. Cereals were the other option on a laid back morning when school is off. Of course, the kids’ ultimate fave, PANCAKES.

I veer away from buying package pancakes in the grocery. As making them is more economical plus it is very easy to do.

1 cup flour, 1 tsp baking powder, 2 eggs, 1 cup evaporated milk, sugar. Were the stuff needed to make these fluffy pancakes.

Quick tips:

-Work on the dry and the wet ingredients separately.

-Sift flour and baking soda to get best fluffy result.

-Slowly add in the dry ingredients to the egg/milk mixture.

-Mix thoroughly to avoid lumps.

-Vanilla or cinnamon may be added as flavor, or grated orange zest for that tangy flavor (two thumbs up for this one)

 The little miss works on her own plate. With fried “saba” bananas on top.

After finishing one pancake, she said she wanted another one and yet she’s already full.

Lemon Square Pullman

When I was still “manning” our small sari-sari store near the busy highway here in our small town, we used to sell this Lemon Square pullman bread. An agent will have a scheduled delivery. Thus, each bread is as fresh as those in the bakery shop downtown.

Then, when I got “kicked out” of the store, I missed buying their breads except on occasion, the kids would want me to buy their equally saleable cupcakes and mini-cakes as baon packs.

Then, when we tripped down to my sister-in-law’s sari -sari store in the nearby town, she offered us this tasty bread for snacks. How fresh they were. And, very chewy and creamy, too. It does not feel crumbly. It’s just…FRESH!

Try one, in case you’ll see them in your local grocery. It’s much cheaper than the other brands.

I bought one pack and this morning, enjoyed it with plain butter and a cup of coffee. Morning goodness :)

failed diets!

Constantly failing to keep tiger eyes for my promised diet, I often thought that reducing or depriving myself of food makes me pitiful. And, at the very end of my coup de grace…I eat mercilessly. Failure!

Can’t help. Especially, I have a husband whose appetite equates Goliath^_^. And, kids, whom I like to serve foods that are as yummy and nutritious.

Thus, this morning, (just like the past 41 years of my life), I resolve to serve myself this plate for my breakfast…:(

Two pieces of “pandesal”. One, with cheese and dressing as spread. The last one, just plain strawberry jam…Plus, a banana for dessert and of course, my caffe latte.

  • pandesal (bread) for carbo. – CHECK!

  • cheese and dressing for proteins and fats. – CHECK!

  • banana for vitamins. – CHECK!

  • stawberry jam, another carbo. – OKAY.

  • coffee, antioxidant. – OKAY.

Think I had the energy to do tons of house work for the day…

Er, tomorrow’s another STORY^_^. Wish me luck…

lick em up, Nutella!

I wasn’t surprised a bit when I saw this morning this empty jar of Nutella. The little one never bothers to get a sliced of bread, she will just spoons it of the jar and licked em! She thought she was eating chocolate spread, especially when I told her it was made by the same man who made her favorite Ferrero chocolates. She wanted more! Where, in fact, it only contains little cocoa but more of hazelnuts, ergo, the name.

My kids so loved the creaminess of it that when I would asked them what do I need to buy for their sandwich spread, they would all echoed to buy Nutella. I guess , every kids need variety in the foods they eat. I used to buy different spreads, but the photo obviously says it all!

Cereals are a favorite, too. They love their Kellogg’s, okay, especially my little one. But, the older 2 needs something heavy. One might be asking for fried rice and an egg and the eldest would come to the breakfast table looking for a sandwich. A mom has to give in. There is no greater joy than seeing your family enjoying every meal you prepared. And, the joy of seeing them, well up on their feet for the day’s activity? Beyond marvelous!
